Ingredients
  

  • 3 cups pumpkin or kabocha squash peeled and cut into 1-inch cubes
  • 3 tablespoons red curry paste Thai-style, adjust to taste
  • 1 can (13.5 oz) full-fat coconut milk
  • 1 cup vegetable broth
  • 1 large red bell pepper sliced into thin strips
  • 4 cloves garlic minced
  • 1 tablespoon fresh ginger peeled and grated
  • 2 tablespoons soy sauce or tamari use tamari for gluten-free
  • 1 teaspoon brown sugar
  • 1 whole fresh lime juiced
  • 1 handful fresh Thai basil or regular basil leaves only
  • 2 tablespoons neutral oil such as avocado or canola oil

Instructions
 

  • Prepare all vegetables before heating the pan. Peel and cube the pumpkin into 1-inch pieces, slice the bell pepper, and mince the garlic and ginger. Having everything ready ensures the cooking process moves quickly and nothing burns while you are chopping.
  • Heat the neutral oil in a large deep skillet or wok over medium heat. Add the minced garlic and grated ginger. Saute for 60 to 90 seconds, stirring constantly, until fragrant and just turning golden at the edges.
  • Add the red curry paste to the skillet and stir it into the oil with the aromatics. Cook for 2 full minutes over medium heat, stirring frequently. This blooming step is essential for developing the full depth of the curry paste's flavor.
  • Pour in the coconut milk and vegetable broth, stirring well to fully incorporate the curry paste into the liquid. Bring to a gentle simmer over medium heat. Avoid letting the sauce reach a hard boil to keep the coconut milk from separating.
  • Add the cubed pumpkin to the simmering sauce. Stir to coat, then cover the skillet with a lid. Cook for 12 to 15 minutes, stirring once or twice, until the pumpkin is completely fork-tender but still holding its shape without falling apart.
  • Stir in the sliced bell pepper, soy sauce, and brown sugar. Remove the lid and simmer uncovered for 3 to 4 more minutes. Taste the sauce and adjust seasoning, adding more soy sauce for saltiness or more curry paste for heat.
  • Remove the skillet from heat. Squeeze in the juice of one fresh lime and stir through the fresh basil leaves. Serve immediately over steamed jasmine rice, garnished with extra basil, lime wedges, and a drizzle of coconut cream if desired.

Notes

For best results, always bloom the curry paste in oil before adding the liquids. Full-fat coconut milk creates a much richer, silkier sauce than light coconut milk. Leftovers keep in the fridge for up to 4 days and taste even better the next day as the flavors meld. This curry freezes well for up to 2 months. Reheat gently over low heat with a splash of broth or coconut milk to loosen the sauce. For a spicier version, add a Thai bird chili or increase the curry paste to 4 tablespoons.
