Ingredients
  

  • 2 heads romaine lettuce washed, dried, and torn into pieces
  • 3 tablespoons fresh lemon juice about 1 large lemon
  • 1 teaspoon lemon zest freshly grated
  • 1 clove garlic finely grated or minced
  • 1 teaspoon Dijon mustard
  • 4 tablespoons extra virgin olive oil good quality
  • 2 ounces Parmesan cheese shaved or freshly grated
  • 1/2 teaspoon freshly cracked black pepper plus more to taste
  • 1/4 teaspoon flaky sea salt for finishing
  • 1 cup croutons optional, homemade or store-bought

Instructions
 

  • Make the dressing: In a small bowl or jar, combine the fresh lemon juice, lemon zest, grated garlic, and Dijon mustard. Whisk together, then slowly drizzle in the olive oil while whisking continuously until the dressing is emulsified. Season with salt and freshly cracked black pepper to taste.
  • Prep the lettuce: Wash the romaine leaves thoroughly and dry them completely using a salad spinner or by patting them dry with clean kitchen towels. Completely dry lettuce is essential for the dressing to coat the leaves properly.
  • Chop or tear the lettuce: Tear or cut the romaine into generous, bite-sized pieces and place them in a large salad bowl.
  • Dress the salad: Drizzle about two-thirds of the dressing over the lettuce and toss gently until all leaves are lightly coated. Taste and add more dressing as needed. You want every leaf coated but not soggy.
  • Add the Parmesan: Shave or grate the Parmesan directly over the dressed salad. Toss once more lightly so the cheese distributes evenly throughout the greens.
  • Finish and serve: Add croutons if using, finish with a final crack of black pepper and a pinch of flaky sea salt over the top. Serve immediately for the best texture and flavor.

Notes

Always dry lettuce completely before dressing to prevent a watery salad. Use freshly squeezed lemon juice and a real block of Parmesan for the best flavor. Start with less dressing than you think you need and add more after tossing. The dressing can be made up to 5 days ahead and stored in a sealed jar in the fridge. Add the lemon zest fresh just before serving for maximum fragrance. Do not dress the salad until you are ready to serve, as it will wilt quickly once dressed.
