Ingredients
  

  • 6 large eggs room temperature
  • 2 large egg whites room temperature
  • 1 cup full-fat cottage cheese blended until smooth
  • 2 oz cream cheese softened, room temperature
  • 1/3 cup shredded parmesan cheese divided
  • 2 tbsp fresh chives finely chopped, plus more to garnish
  • 1/2 tsp fine sea salt plus more to taste
  • 1/4 tsp black pepper freshly ground
  • 1 tsp olive oil or unsalted butter for greasing the baking dish

Instructions
 

  • Preheat your oven to 375°F (190°C). Grease an 8x8 inch baking dish thoroughly with olive oil or butter, making sure to coat the sides as well.
  • Add the cottage cheese, cream cheese, egg whites, salt, and pepper to a blender. Blend on medium-high speed for 30 to 45 seconds until the mixture is completely smooth with no lumps remaining. This step is key to achieving the signature creamy texture.
  • Crack the 6 whole eggs into a large mixing bowl. Pour the blended cottage cheese mixture over the eggs and whisk gently until just combined. Avoid over-whisking to preserve the lightness of the batter.
  • Fold in most of the shredded parmesan, reserving about 2 tablespoons for topping. Add the chopped chives and stir to combine. Taste the mixture and adjust seasoning with additional salt and pepper if needed.
  • Pour the egg mixture into the prepared baking dish, spreading it into an even layer. Scatter the reserved parmesan evenly over the top.
  • Bake in the center of the preheated oven for 22 to 28 minutes, until the edges are fully set, the top is golden brown, and the center has only a very slight jiggle when the pan is gently nudged.
  • Remove from the oven and allow the bake to rest for 5 minutes before slicing. This resting period helps the texture firm up and makes for cleaner, neater slices. Garnish with additional fresh chives and serve warm.

Notes

For extra fluffiness, separate 2 of the whole eggs, beat the whites to soft peaks, and fold them in at the very end before pouring into the baking dish. Do not overbake — pull the dish when the center has a gentle wobble, as residual heat will finish cooking it. Room temperature eggs and cheese blend more evenly and bake more uniformly. Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat in a 325°F oven for 8 to 10 minutes or microwave at 60 percent power in short intervals.
